Hickory was born from the simple belief that familiar, recognizable foods can be elevated by using the freshest Pacific Northwest ingredients and enhanced by inventive New American cuisine flavor profiles.
Our owner, Matt Olson, is a local businessman, restaurateur, and avid hunter and fisherman. He believes the best tasting dishes are made from wholesome, locally sourced ingredients. Hickory not only offers a flavorful dining experience to our guests, it helps us support the regional economy and showcase the amazing bounty provided by nearby farmers and fishermen.
We overlook nothing at Hickory, from friendly, attentive service to the food we serve. Our made-from-scratch fare includes smoke-kissed meats prepared in our on-site smokers and served with our chefs’ secret recipe BBQ sauce. Salads made with the finest seasonal greens are accompanied with homemade dressings. Our pantry includes hand-selected artisanal ingredients, such as small-batch canned Albacore tuna, and our refrigerators are stocked with local cheeses.
